Baked Penne Meatball Casserole

My kids constantly ask me what we're going to have for dinner.  Luckily now, they can just look at our new Menu Board.   BUT, they still want to know what's in whatever it is we're having.
So, last night when we had this Baked Pasta Meatball casserole, I had to tell The Builder what was in it.  (Technically, I didn't have to.  A lot of time I just tell him not to worry about it.)  I did tell him this time though, and he said,
"Okay.  I like all of that stuff."

This casserole can be made with any kind of shorter pasta.  We almost always use whole wheat pastas to up our fiber and vitamin intake.
This can be made with whole wheat penne, macaroni, ziti or rotini. 

 My hubby and I ate it with baked cheesy veggies and the kids ate it with corn on the cob.

It was a super simple casserole because everything came from my freezer or pantry.

Here's what we used:

 1 box of whole wheat penne or macaroni
24 oz. jar of spaghetti sauce
2 cups of lowfat cottage cheese
24 frozen meatballs (we used turkey meatballs)
6 slices of mozzarella cheese

Here's what we did:
(as always, the pictures are not awesome, but I'm sure you get the point!  useful, but not artful!!)
Cook penne according to package directions.
Preheat oven to 350 degrees.
Place cooked penne in oven-proof casserole dish.
Add the frozen meatballs and cottage cheese.

Mix penne, cottage cheese and meatballs together.
Pour spaghetti sauce over penne, meatballs and cheese.
Mix everything together.

Place mozzarella on top.
Bake for 40 minutes in preheated oven.
If you love cheese and can take the fat, load that thing up with more mozzarella and cottage cheese!  And maybe add a little parmesan.

I garnished mine with dried parsley and crushed red pepper.
