Creamy Cauliflower and Corn Chili

It might seem like June is getting a little weird to be posting Chili recipes, but it is still cold here!  It was in the 40s last night and this morning!!  Seriously??!!??

So, it's not so strange to be making chili.  I had some cauliflower that I needed to use, so it became part of this chili recipe.  The good thing is that it's easy.  I threw everything into my slow cooker and went on about my day. 

Here's what I used:
1 head of cauliflower, washed and broken into small florets
1 can of sweet corn
1 can of light red kidney beans
29 oz. can diced tomatoes
32 oz. carton beef broth

1 Tbsp. Red chili powder
1 1/2 tsp. garlic powder
 1 1/2 tsp. onion powder
1 1/2 tsp. dried oregano
1/2 tsp. cumin
1/2 tsp. paprika
black pepper to taste

1 cup yogurt
1/2 cup shredded cheddar cheese

Here's what I did:
Place cauliflower florets in the slow cooker crock pot.
Pour in the corn, kidney beans, tomatoes and beef broth.
Put chili powder, garlic powder, onion powder, oregano, cumin, paprika and black pepper in.
Stir to combine.
Cook on high for 4 hours (or low for 6 - 8)
Right before eating, stir yogurt and cheese into chili in slow cooker.
Serve and enjoy!
