Here's what we used:
1 1/4 cups whole wheat flour
1 cup quick cook oatmeal
1/4 teaspoon salt
1 teaspoon baking soda
1/2 cup butter (1 stick), softened
1/2 cup white sugar
1/2 cup brown sugar, lightly packed
1 teaspoon vanilla extract
2 eggs
1/2 cup dried cranberries or dried berries and cherries
1/2 cup dark chocolate chips
Here's what we did:
Preheat oven to 350 degrees.
Cream together the butter and sugars. Add the eggs and mix. Add the vanilla and mix.
In a separate bowl, whisk together the dry ingredients.
Add the dry ingredients to the wet ingredients and mix until thoroughly combined
Fold in the dried cranberries and chocolate chips.
Use a cookie scoop to scoop cookie dough onto cookie sheet. I always use my baking stones. Always.
Bake in preheated oven for 9-13 minutes. All ovens and cookie sheets vary, so check on them after 9 minutes. These make a flat, chewy cookie. They spread out a lot and will need to cool a little before you'll be able to get them off the cookie sheet or stone. If you try before they're ready it will lead to frustration and possible swearing. Or, I could just finally be PMSing. (Yes, it has been 70 days since I began my period last time. Is this the end for me? Only time will tell.)
The kids helped us make them. . . . . .arguing over who got to stir the most or crack the eggs!
