Meal Plan Monday

I am so happy that I was actually able to create a meal plan this week. It makes my life a little bit easier during the week. Some of the things that I'll be cooking will be a little difficult for me--like the spaghetti squash.  It is extremely hard to cut into a hard squash with only one hand.  But, it makes it so much easier if you can cut the squash in half before you cook it!  Hopefully I'll be able to get some help.

Last time I cooked a spaghetti squash I had to pierce it with a knife and cook it whole in a slow cooker. That works, but I'd rather be able to get the seeds out first so that we can roast them! Also, it's just easier to deal with the whole squash before it's so hot. That way when it's done cooking, all you have to do is twirl the strands out.

This plan will be using several of the veggies and meat that we got from this organic haul and this organic haul.

Sunday -- Black Bean and Rice Enchiladas and a Broccoli, Zucchini, Red Pepper Medley
Monday --  Pasta Salad
Tuesday -- Spaghetti Squash with White Bean Sauce
Wednesday -- Beef Stew
Thursday -- Spaghetti Moussaka Pie
Friday -- Pork Cabbage Soup
Saturday -- Everyone is on their own!
