Tater Tot Egg Breakfast Casserole Recipe

I always make a casserole ahead of time on holidays to make holiday mornings easy~~something I can just throw in the oven and cook~~hopefully at the same temp as cinnamon rolls, or some other yumminess.  This would be good for any weekend morning as well.  I wanted to use shredded hashbrowns, but Aldi was all out.  I used tater tots instead.  Forgive this picture!  I remembered after we started digging in to take a photo.  Time with my family is precious and I just didn't get the pic!

Here's what we used:
(1 ) 2 pound bag of tater tots
6 oz. of breakfast sausage, cut into bite-sized pieces
12 eggs
1/2 cup sour cream
1/2 teaspoon garlic powder
1/2 teaspoon salt
6 oz. pepperjack cheese, shredded
green onions if desired

Place the tater tots in the bottom of a 9-13 baker. Sprinkle bite-sized sausage over tater tots.

Beat eggs together with sour cream, salt and garlic powder.

Pour eggs over tater  tots and sausage. Sprinkle cheese on top. Place green onions on top.

When ready to make, preheat oven to 375 degrees and bake for 45 minutes to 1 hour--when eggs are set.

We originally posted this recipe at Christmas, which is why I wanted something easy to throw in the oven. I didn't want to miss all of this.

We are staying in our pajamas all day and watching movies, playing with our new stuff, coloring and eating leftovers.
