Whole Wheat Matcha Cranberry Chocolate Chip Muffins & Kiss Me Organic Matcha Review

If you haven't heard by now, Matcha is like green tea on steroids.  It is actually green tea.  But, it uses the whole leaf instead of just steeping the leaves, so you get more of the antioxidants.  It has 137 times the amount of EGCG for super antioxidant power.  You can find Matcha green tea powder to drink (ceremonial grade) or you can find Matcha green tea powders to use in recipes (culinary grade), like these muffins I made.

A little bit of the bright green powder goes a long way.  A daily serving is 1/2 teaspoon.  I believe there are about 50 servings in this bag.  The bag is a heavy duty bag to help keep the Matcha fresh.  It is recommended that you use it within 2 months of opening it.  There are so many yummy recipes to use Matcha in, I don't think that would be a problem!  I usually just keep mine in the fridge once I open it, since it should be kept in a cool, dry place.

I was inspired to create this recipe by one of the recipes in their e-book.  The original recipe was for Cranberry Lemon Matcha Muffins.  The recipe called for 2 sticks of butter, though, and I didn't want to use that much butter!  Also, I decided to skip the lemon and add chocolate chips instead.  Plus, I always use whole wheat flour and Truvia blends when  I can.  That helps me get more fiber and less sugar.

 Whole Wheat Matcha Cranberry Chocolate Chip Muffins
 2 cups whole wheat flour
1/2 cup truvia baking blend
2 Tablespoons Matcha powder
2 Tablespoons milled flaxseed
2 teaspoons baking powder
1/4 teaspoon baking soda

1 stick of butter, softened
1/4 cup truvia brown sugar blend
1 cup of milk
2 eggs
1/4 cup vegetable oil

1/2 cup semisweet chocolate chips
1/2 cup reduced sugar dried cranberries

Preheat oven to 375.

Whisk together all dry ingredients in a small bowl.

Combine the softened butter with the brown sugar blend in a medium bowl.  Once combined, add the milk, eggs and vegetable oil.  If your milk and eggs are cold, the butter will start to harden again.  That's okay.  Just make sure you mix it really well.

Combine the dry ingredients into the wet ingredients and mix until combined.  It's never good to overmix any kind of muffin batter, so once it's combined, it's good.

Fold in the cranberries and chocolate chips.

Spoon muffin batter into muffin liners or greased muffin pan, about 3/4 full.

Bake for 18 - 20 minutes. All ovens vary.  A toothpick will come out clean when they're ready.
