Healthy and Inexpensive Student Meal Ideas

As a student, healthy eating isn’t just important for your physical health, it’s also very important for your mental health and well-being as well as your ability to study well and get great results. The right nutrition isn’t just vital for your body, it’s also essential for your mind, especially if you are studying for an advanced degree such as a BSN to DNP online which will require a lot of work and attention on your part. But, for students, cooking healthy meals can be costly and time consuming. We’ve listed some quick, easy and cheap meal ideas for students to try.

Sweet Potato and Butternut Squash Soup

Vegetables are an essential part of your daily nutrition, and what better way to get as much of your five a day as possible than a tasty vegetable soup? This recipe is suitable for meat-eaters, vegetarians, and vegans, and can also be easily tweaked to include veggies that you enjoy the most. To prepare the soup, peel and boil sweet potatoes and butternut squash in a pan until they are soft, with salt and pepper to taste. For extra flavor, add a vegetable stock cube to the boiling water. Then, simply add the vegetables to a blender, blend, serve and enjoy! This is a great recipe for batch cooking as the soup will keep for a few days in the fridge or freezer. 

Meaty Pasta and Sauce

Pasta is a great choice for students as not only can it be obtained very cheaply, it’s versatile and there are a multitude of different sauces that you can use with it. For this recipe, you will need minced meat of your choice (beef mince goes well, but you could use pork, turkey, or even vegetarian mince if preferred). You’ll also need chopped tomatoes or passata, one carrot, one stick of celery, one brown onion, and a clove of garlic. Blend the carrot, celery, garlic, and onion into a liquid consistency. In a large pan, cook the meat until browned and add the passata and blended vegetables, along with your favorite herbs and spices and salt and pepper to taste. Leave to cook for around 20-30 minutes, then add to your pasta and enjoy. The sauce can be frozen for later.

Blueberry Smoothie

As a student, getting a good dose of superfoods each day is essential for a good level of energy and will help you to study more efficiently, especially for online students who undertake a lot of self-directed learning. Smoothies are a great way to make sure that you’re getting enough fruit and vegetables as you can blend your five-a-day and more into a tasty drink. For this smoothie, simply add frozen blueberries to more of your favorite fruits and vegetables such as spinach, kale, strawberries and bananas, and blend with water, milk or a milk alternative. Smoothies are great for students on fast paced courses such as doctor of nurse practitioner programs as they provide a convenient healthy snack.
