Avocado Tuna Stuffed Mini Peppers

This avocado tuna salad is very similar to the guacamole chicken salad I made.  It's so easy to mix avocado with any kind of chicken or tuna to come up with a healthier version of chicken salad.  Just sub in mashed avocado instead of mayo.  Yum --- mo!

I added a little bit of lime juice to my avocado in this one because it needed to not get brown overnight.  I actually made this for my hubby's lunch box for the next day.

I bought a whole lot of onions for our Hobbit party to use as decorations. . . . hey, if you've seen the movies, you know why!  😉  So, I used some red onion in this.

These peppers are not cooked, just stuffed.  I was trying to think of an easy way to add more veggies and make the tuna salad kind of easy to eat at the same time.  After about four or five peppers though, I just said the heck with it and cut each pepper in half and added them to the edge of the bowl so that they can be used for dipping.

 To stuff the peppers, I made it easier by cutting the tops off and then making a slit.  Small peppers can be hard to stuff without the slit.  .  .  .  at least with a filling that has chunks.

Here's the recipe I used:

1 avocado, mashed
1/2 teaspoon lime juice
1 Tablespoon of extra virgin olive oil
about 1 Tablespoon fresh cilantro, chopped
1/4 cup chopped red onion
1 hard-boiled egg, chopped
(2) 5 oz. cans of chunk light tuna

As many mini peppers as you would like to stuff or use to scoop the tuna salad with.

Mix everything together and stuff the peppers.

It would also be good rolled up in Romaine leaves.


If you're not paleo or eating clean, you could also add little bits of cheese to it.
