Pepper Cilantro Lime Roasted Salmon

I love the smell of cumin and cilantro.  And when I say love, I don't mean just a little bit.  They both smell so bright to me.  I mean, I might just make myself a cumin candle.  😜

I just happened to have some limes, fresh cilantro and fresh jalapenos that I got at aldi the other day, so I used them for this salmon dish.

I just buy the frozen salmon fillets from aldi, because they're easy to thaw out and salmon cooks pretty quickly.  In fact, this salmon only takes 10 minutes to cook.  We cook it at a high temperature for a short time.  We just let the oven heat up while we're preparing everything.

When you cook it at 500 for 10 minutes, the salmon gets done and the peppers still stay crisp-tender.  If you like your peppers a little more done, you might want to put them in the oven before the salmon.

Here's what we used:
4 salmon fillets
1 tablespoon of olive oil
2 fresh jalapenos, cut down center and seeded
2 limes
1/2 orange bell pepper, cut into strips
1/2 red bell pepper, cut into strips
1/4 teaspoon cumin
1/4 teaspoon paprika
1/4 teaspoon sea salt
1/4 teaspoon fresh ground pepper
1 stalk of green onion, snipped
1/4 cup fresh cilantro

Place salmon in oven-safe dish.  Drizzle with olive oil.

Cut limes in half and squeeze juice on salmon fillets.
Place a half jalapeno on each salmon fillet, cut side down.
Mix the cumin, paprika, salt and black pepper together and sprinkle over salmon.
Place cilantro and green onions on top of salmon.
Place bell pepper strips around the edge of the 

Cook at 500℉ for 10 minutes or until salmon is no longer translucent and flakes easily with a fork. Don't overcook.  All ovens are different.  Definitely check salmon by 10 minutes.
