Cookin' Up Garlic Honey Chicken Using the Cave Tools Pepper Rack

The stainless steel Pepper Rack from Cave Tools features 24 cut out circles that you can stand peppers or chicken legs in for grilling

or roasting in your oven.  It was created to fit right on top of a grill rack, but I used it on a sheet pan in the oven.

Here are some of our observations about the Pepper Rack:

The Good:

  • After we used the rack, it was pretty easy to clean, including being able to put it in the dishwasher.  
  • It was easy to cook chicken this way in the oven so that all of the edges cook evenly.
  • The Pepper Rack came with a pepper corer, which was cool once I got the hang of it.
  • You can fit a lot into the rack.

The Mehhhh
  • The holes are not always the perfect size for the size peppers that I had.  Some of my peppers were too small and slipped through the holes.  I tried mini sweet peppers too, but some of those were too big for the holes.
  • The edges on the top surface are kind of sharp.  I'm sure that there is a reason for the sharp edge to be facing up, but I wish the sharp edge faced down.

We cooked our chicken drumsticks using a Honey Garlic sauce.  Here is our sauce recipe.  You can use it on any kind of chicken and cook the way you normally would.

Honey Garlic Sauce for Chicken

1/4 cup Olive Oil
1 teaspoon white vinegar
1 Tbsp. Honey
1 Tbsp. Soy Sauce
1/8 teaspoon ground ginger
1/8 teaspoon cinnamon
1/4 teaspoon black pepper
1 Tbsp. + 1 teaspoon garlic powder
1 teaspoon onion powder

Whisk all ingredients together and brush onto chicken.
Cook chicken the way you prefer to cook it~~ bake, roast, grill, broil.
Brush more sauce on every 10 - 15 minutes, during cooking.
