4 Easy and Super Quick Cold Salad Recipes

Cold salads are tasty, easy to prepare, and are actually healthy in most cases, but that doesn’t mean all of them are equal. Some are a lot harder to prepare than salads should be, while others don’t taste very good at all. The following four, however, are all easy to make, taste great, and hardly take any time at all.

Cold Pasta Salad

  • 400 grams (14 oz.) of rotini pasta (uncooked) 
  • 2 chopped cucumbers
  • Half a finely chopped onion
  • ¾ cup of pitted and sliced black olives
  • 10 finely chopped cherry tomatoes
  • 1 cup of Italian salad dressing

How to Do It

  • Add a bit of salt to a large pot of water and heat until it starts boiling
  • Add the rotini pasta and stir till it starts boiling again
  • It should take anywhere between 6 – 10 minutes for the pasta to be cooked appropriately
  • Cool down the pasta in a colander by running cold water through it at the sink
  • Combine the cold pasta in a large bowl with the cucumbers, tomatoes, onion, and olives
  • Add the salad dressing and mix by stirring
  • Put it in the fridge for 2 – 3 hours and it’s ready to be served

Fruit and Curry Chicken Salad

  • 4 halved, diced and cooked chicken breasts
  • 1 peeled, cored and diced apple
  • 1/3 cup of golden raisins
  • ½ cup of halved green grapes
  • ½ cup of chopped and toasted pecans
  • 1 diced, stalk celery
  • 4 chopped green onions
  • 1/8th teaspoon of ground black pepper
  • 1/2 teaspoon of curry powder
  • ¾ cup of mayonnaise
How to Do It
Just pour everything together inside a large bowl and mix till it is all properly combined. You can put it in the fridge for an hour or two if you want, but that’s not necessary.

Cold Shrimp Dip

  • 400 grams (1 3/4 cups) of sour cream
  • 20 grams (1 Tbsp + 1 tsp) of Italian salad dressing
  • ½ a pound of cooked shrimp

How to Do It
Mix the sour cream, Italian salad dressing, and the shrimp together in a bowl and then put it in the fridge for two hours, before serving the dip with potato chips.

Cold Melon Salsa

  • Half a honeydew melon, peeled and fine diced
  • 1 peeled and finely diced cantaloupe
  • 3 seeded and finely diced tomatoes
  • 1 cup of minced red onion
  • ½ cup of chopped cilantro
  • Half a jalapeno pepper, minced
  • ½ cups of finely chopped almonds
  • 3 tablespoons of orange juice
  • 2 tablespoons of fresh lime juice
  • ½ a teaspoon of salt

How to Do It
Add the melon, tomatoes, cantaloupe, jalapeno, red onion and cilantro in the bowl first and then mix. Add the orange juice, lime juice, almonds, and salt next. Stir till everything mixes well and then put it in the refrigerator for about 4 – 5 hours before serving.
